Pumpkin Chocolate Chip Mummy Bread

This is my family’s all time favorite pumpkin bread recipe. It is extremely simple to make with minimal ingredients. I made this mummy bread to take over to our new neighbors as a housewarming gift. This would also make a great gift for teachers, hostess gift, for a new mother, or anywhere you need to take a delicious treat!

Serving Size: 1 loaf

  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 1 cup sugar
  • 1 cups canned pumpkin
  • 3/4 cup canola oil
  • 3/4 cup semisweet chocolate chips
BAKING DIRECTIONS: Set oven to 350 degrees. In a large bowl, combine the flour, cinnamon, salt and baking soda. In another bowl, beat the eggs, sugar, pumpkin and oil. Stir into dry ingredients just until moistened. Fold in chocolate chips. Pour into a greased 8-in. x 4-in. loaf pan. Bake at 350° for 60-70 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to wire rack.

  • Saran Wrap
  • White Gauze
  • Stick on eyes
  • Black chalk board tag
  • Ribbon of your choice
  • Scotch Tape

DECORATING DIRECTIONS: Wrap loaf of bread with saran wrap, sealing the edges on the bottom of the loaf. Using scotch tape, tape one end of the gauze down on the bottom. Wrap the gauze around the loaf leaving a little opening for the eyes. Seal remaining end on bottom of loaf with scotch tape. Stick the eyes on or if they aren’t sticky, a dot a hot glue will work. Wrap with ribbon and label.
