This recipe is a family favorite. Baked Chicken Parmigiana with only 5 ingredients! Yes, I am Italian. And yes, I use a lot of store-bought pasta sauce. Don’t get me wrong, homemade pasta sauce is the best. But as a busy mom, who has time for that? Recipe is below. I typically serve with pasta or vegetables. Let me know if you have any questions.
5-Ingredient CHICKEN PARMIGIANA RECIPE
- 2 Chicken Breasts
- 2 Eggs
- 2 cups of Bread Crumbs
- 1 jar of Pasta Sauce
- 1 cup Mozzarella Cheese
- Extra: Fresh Basil or Parsley
Set oven to 400 degree. Spray baking sheet with olive oil and set aside. Take chicken breasts and cut off fat. Break egg into bowl and whisk with fork. Pour bread crumbs into another bowl. Dip each chicken breast into egg mixture, then into bread mixture. For extra breading, re-dip into egg mixture and again into bread mixture. Place on baking sheet sprayed with olive oil. After placing on baking sheet, spray tops of chicken with olive oil for some extra moisture. Bake for 35 minutes at 400 degrees. After 35 minutes, remove baking sheet, add a spoonful of pasta sauce and mozzarella cheese on each chicken breast, return to oven for an additional 5 minutes.
*For extra touch, add fresh basil or parsley on top of pasta sauce before returning to oven.
